Xan`tho*pro"te*in, n. [Xantho-+ protein.] (Physiol. Chem.) Defn: A yellow acid substance formed by the action of hot nitric acid on albuminous or proteid matter. It is changed to a deep orange- yellow color by the addition of ammonia.
